This soup is definitely one of my favorites! It is so comforting anytime, but is especially good on a cold winter day. It also takes me back to the days of my upbringing, when we would have to peel ten pounds of potatoes, for our family of 7. My mom would also make a skillet of cornbread, or biscuits, or whip up some dumplings to stretch this dish to fill up five hungry kids! I would love to go back to some of this days! I think I am going to have to make a video on how to make some potatoes and dumplings, sounds Oh So Good to ME! How about you?
Cheesy Potato Soup
This soup is very comforting and hearty!
Ingredients
2 tablespoons butter
I small onion-diced
2 tablespoons gluten free all purpose flour/or regular all purpose flour
1 teaspoon salt
1 teaspoon ground mustard
1 teaspoon garlic powder
5 cups milk
Potatoes
5 lbs potatoes-peeled and chopped into cubes
1 1/2 quart water
1 teaspoon salt
1 teaspoon onion powder
Instructions
Peel and chop potatoes, cook on low in a crock pot after adding 1 1/2 quart water and
1 teaspoon salt and
1 teaspoon onion powder
Cook until done.
In a separate sauce pan, melt 2 tablespoons of butter on med heat, add the small diced onion.
Cook the onions until translucent.
Add the gf flour, salt, ground mustard, and garlic powder. Mix well until there are no clumps left.
Add two cups of milk, mix well. Then add another cup of milk up to 5 cups until you get as much sauce as you would like to have, remembering you will add about three cups cheese once the liquid becomes thick. Continue to stir and mixing well over medium heat, until the liquid is as thick as you want it. When the liquid becomes thick add the cheese. Stir until mixed well. Add as many of the potatoes to your sauce as you would like and stir until combined. If your sauce is too thick you can as as much add the potato water as you like to thin it to your preference. Serve in a bowl with your favorite toppings, I used some more grated cheese and fresh cooked bacon which was crumbled, and a smidgin of rosemary. I hope you enjoy yours as much as I did!
