This soup is definitely one of my favorites! It is so comforting anytime, but is especially good on a cold winter day. It also takes me back to the days of my upbringing, when we would have to peel ten pounds of potatoes, for our family of 7. My mom would also make a skillet of cornbread, or biscuits, or whip up some dumplings to stretch this dish to fill up five hungry kids! I would love to go back to some of this days! I think I am going to have to make a video on how to make some potatoes and dumplings, sounds Oh So Good to ME! How about you?
Cheesy Potato Soup This soup is very comforting and hearty! Ingredients 2 tablespoons butter I small onion-diced 2 tablespoons gluten free all purpose flour/or regular all purpose flour 1 teaspoon salt 1 teaspoon ground mustard 1 teaspoon garlic powder 5 cups milk
Potatoes 5 lbs potatoes-peeled and chopped into cubes 1 1/2 quart water 1 teaspoon salt 1 teaspoon onion powder
Instructions Peel and chop potatoes, cook on low in a crock pot after adding 1 1/2 quart water and 1 teaspoon salt and 1 teaspoon onion powder Cook until done.
In a separate sauce pan, melt 2 tablespoons of butter on med heat, add the small diced onion. Cook the onions until translucent. Add the gf flour, salt, ground mustard, and garlic powder. Mix well until there are no clumps left. Add two cups of milk, mix well. Then add another cup of milk up to 5 cups until you get as much sauce as you would like to have, remembering you will add about three cups cheese once the liquid becomes thick. Continue to stir and mixing well over medium heat, until the liquid is as thick as you want it. When the liquid becomes thick add the cheese. Stir until mixed well. Add as many of the potatoes to your sauce as you would like and stir until combined. If your sauce is too thick you can as as much add the potato water as you like to thin it to your preference. Serve in a bowl with your favorite toppings, I used some more grated cheese and fresh cooked bacon which was crumbled, and a smidgin of rosemary. I hope you enjoy yours as much as I did!

Some blessings last but just a day, while others last a lifetime! “Roscoe” aka “Ollie”, was just an angel to entertain for a few short days, but His impact will last a life time! His owners were desperately searching for him, and were missing him so very much! Even-though we could not keep him, his purpose in our life has been revealed and in about three weeks we will welcome a new member to our homestead! This is the second recipe video for the Thanksgiving Dinner collaboration that I participated in back in November. I was so excited to have been asked to take part in the holiday collaboration. I hope you enjoy this recipe for the congealed salad. It is one of my favorites.
Ingredients for the cranberry jello: 2 (3-oz.) packages Raspberry Jello 1 1/2 cups boiling water 1 (20-oz.) can crushed pineapple *1 (14-oz.) can whole cranberry sauce 3/4 cup cranberry juice 1 cup toasted walnuts or pecans , chopped & divided
for the cream cheese topping: 1 (8-oz.) package cream cheese, softened*. 1 cup sour cream 1/2 cup granulated sugar
instructions Dissolve the raspberry Jell-O in the boiling water. Remove from heat and dd the crushed pineapple (juice and all), whole berry cranberry sauce, 3/4 cup cranberry juice, and your choice of nuts to the Jell-O mixture. Reserve a small amount of the nuts to sprinkle on top. Mix well Pour into a 9 x 13” glass baking dish and refrigerate until firm, about 2 hours. Topping: For a lump-free cream cheese topping, first cream together the cream cheese and sugar using a hand mixer. Then add the sour cream and whip until smooth.When the cranberry jello mixture is firm, spread the cream cheese topping over the top. Garnish with additional chopped toasted walnuts or pecans. Refrigerate for about an hour to allow the topping to firm up.
NOTES: DO NOT use fresh pineapple in this recipe. Fresh pineapple contains an enzyme that will prevent the gelatin from setting up. DO NOT soften the cream cheese in the microwave. It may change the consistency and result in the cream cheese topping not setting up properly.

This video covers a recipe that I put on Youtube as part of a collaboration with a few other You-tubers. It was for a Thanksgiving Dinner collaboration that Lori @Whippoorwilllholler so graciously invited me to join. It was my first invite to a youtube collaboration. I was so excited and appreciative to be joining all of the wonderful experienced you-tubers! I hope you enjoy the video, I surely enjoyed learning all the ins and outs of participating in a collaboration, and I got to eat the result, well, sorta. I ate the food not the video!
Recipe Creamy Macaroni N Cheese 8 oz elbow macaroni uncooked Cheese Sauce: 2 TBS butter 2 TBS all-purpose flour (I used gluten free all purpose flour) ½ tsp salt 1 teaspoon of ground mustard 1 dash of Worcestershire Sauce ¼ tsp garlic powder (optional but recommended) 1 cup whole milk ¼ cup sour cream or Greek yogurt 2 cups shredded cheddar cheese INSTRUCTIONS
Cook elbow macaroni according to package instructions. Be sure to add ¼ tsp salt to the water used to boil the noodles. Drain, and set aside. Make the cheese sauce: Mix flour, salt, and garlic powder together in a small bowl. Set aside. In a medium saucepan over medium heat, melt the butter. Add flour mixture and whisk to combine. Cook for 1 minute until mixture is slightly brown. Add 1-1 1/2 cup milk and whisk until the mixture is smooth. Add the teaspoon of ground mustard, and dash of Worcestershire Sauce and stir to mix. Add sour cream (or Greek yogurt) and whisk until smooth. Cook on medium-high heat until the mixture is thickened (about 3-5 minutes). Do not let it boil. Once mixture is thick (sticks to the back of the spatula), reduce heat to low and add cheese. Whisk until cheese is melted and mixture is smooth. Taste and add more salt/seasoning if desired. Add cooked pasta to the pot of cheese sauce and stir until the sauce is evenly distributed. Let the mac and cheese cool for 3-5 minutes or until the cheese sauce has thickened a little bit and sticks to the noodles. Serve warm!

Moses came to visit our homestead; his visit actually lasted a whole month. You see, Moses is a Nubian Stud. He has an awesome lineage with some really good breeding history.
Moses was really a very tame Nubian Stud. So tame, that we really considered keeping him on our homestead. There was only one problem…. we don’t have enough space to house a male goat. With dairy goats, you have to keep the females who are in milk a good distance from a male, so the milk will not have any offensive odors. Unfortunately, we do not have that much land. 🙁
We considered ourselves very blessed to have had the opportunity to have had access to him for the next season of kidding. We have the Crowley family to be thankful for allowing us to “borrow” him for the month long visit. Thanks so much Crowley’s! We love you guys!
Looking forward to this upcoming kidding season. I hope I can keep up with the homestead chores, and still have energy for my day job, you know the one that pays for the animal feed!!!
It is so hard to believe that we have had Harold the pot-bellied pig for almost a year. He has grown so very much! I need to do another updated video on Him. Hopefully, we will move him to a new pen very soon, where he will have more room to roam! He might even get to visit with the new “girls” on the homestead. God has been so good to provide so many blessings to us!
Live each day with humility and give glory and honor to God! This is sometimes easier said than done! We sometimes can get into the mindset that we have to make time in our busy days to do so. The best way I have found to make this work for me is to recognize every moment I live is a chance to be humble and give Glory to God. I don’t have to set a specific time to draw this occurrence into a daily planner, I just have to have a mindset of being in a constant state of being humble and giving Glory to God! He is worthy of this constant awareness.

Have you all been wondering where my blog post have been hiding? Well, this past year has flown by! How about you all? I have had to do some updating to the website to try and make it more user friendly. I have also decided to just go back in time and upload all of the YouTube videos with a small blog explanation. When life has gotten busy on the homestead, most of my updates have been quick post on my social media venues, so please join those to keep up to date. I hope that this does not overwhelm anyone. Once I finish all of those, I have plans to keep the blog post on my website more up to date! If you have previously seen any of the upcoming post or videos, just forgive the repetition!
